Update: I've loaded up the non-control plate part of the pickguard very courteously made by user rhubka (check out his Reverb store if you want SS pickguards);

Very nice!! So you're planning to build a new body now rather than modify an existing Super-Sonic?
I'm excited to see how that Mustang/Jazzmaster hybrid bridge/tremolo comes together, have you got it working yet?

Re: Modding a Squier Super-Sonic to be left handed
You can copy one. Reach out to Sound Guitar Works to ask about a body blank with a strat neck pocket and a left handed vintage Strat trem route placed for 24" scale. They should be able to do that. Then it's up to you to make a template for the body outline and route for the pickups. The lefty control plate looks like a Jaguar piece which you can get in stainless steel. Buy a Super Sonic on the used market, trace the body and pick guard so you can make templates. Reassemble and put it back out for sale. I did something like this when I made a lefty Squier 51 back when they first came out.
For this one I made the body from scratch and used a Fernandes Strat body to make the outline for the body template. A Squier 51 owner was kind enough to trace his pickguard for me. PIckup routes were made using templates from StewMac or Ebay.
A nice trick for accurately tracing a body with rounded edges is to sharpen a pencil, then use a bench grinder to remove one side of the pencil. That way when you trace, you're getting the exact profile. It's not going to be a cheap one to build, but you'll have the only one.

Here's some photos, none in action of course because the guitar isn't done
I fabricated the plate myself out of aluminium, but the internals are taken from a cheap left handed Jag trem I bought on Amazon because it was the only reasonably priced unit I could find

Update: the body is mostly shaped, still some work to do around the neck pocket but that's fine work and will come later
