Forgive my ignorance.
I recently bought some bootstrap jag pickups and I want to put them in a very simply wired guitar, with just a three position toggle switch and a single volume control - but I don’t know what’s going on with each pickup having three wires coming out. Can someone clue me in?

It's most likely that they have separate ground wires for the claw and the coil, which were traditionally shared in the same wire. Those two need to be separate for series and out-of-phase wiring. Like on the Marr and Am Pro jags. If you intend to do neither wiring option, just ground both wires (to any convenient ground point).
