Leo Kottke's "Part Two" is 12 string acoustic slide guitar.
Jimmy Bryant tuned the strings not to octaves, but to other intervals so he could play instantly harmonized licks. Check out Stratosphere Boogie.

Luna-Moon Palace. Tom Verlaine plays the XII solo on the recording, but Dean does a pretty good job here.

Some people may not know Jimmy Page used a Fender XII on Stairway To Heaven. Of course for 12 string electric, Roger McGuinn defined a whole sound and stands head and shoulders above the rest.

Probably not what you meant, but early Genesis had some interesting 12 string stuff. I remember being fascinated by Stagnation as kid when my dad would put Trespass on. Couldn’t figure out what was playing.

I learnt much later it’s layered keyboards & 12 strings.
I have nothing to offer anybody, except my own confusion?

I just got one and I anticipate I won't be too good at it for awhile, so that'll probably be pretty 'interesting' to say the least :D
