I’m thinking about grabbing a JC-40 for both myself and band mate.
I understand these have the stereo feature. Wondering if the amp is going stereo out, is there a way to have sound through the speakers as well?
If any of you use them, how do you like them?

This is the only amp I use now. I love it! You can go stereo out and still have sound out of the speakers too (if you don't want that, just plug in some headphones and the speakers will be muted).
I mostly play through headphones so it is perfect for me. But it sounds great through the speakers too. If you use a lot of stereo effects pedals, it is one of the best amps out there.
I wish they made a version of the JC-120 with the features of the 40 (headphone out, stereo in, etc.). I'd love to have the same sound and features with a larger cabinet and bigger speakers. Maybe some day!

There is some hiss, but you'll only notice it if you play really quiet and clean.
There are a couple really good demos of the amp on Youtube. "That Pedal Show" did one, and were surprised by how good the amp is:
