Turns out that never owning a Stratocaster type guitar until fairly recently has left me not knowing much about how to set up this kind of tremolo system. Kind of complicated. It came to me set up fairly well but I fucked with it and now I don't know how tight I want the strings to be or where I want the unit to sit. I don't even know what the goal is here.
I can't believe that people say Jazzmasters are complicated... this shit is weird. Anyone have any tutorials or advice or anything? Thanks!

I've only owned an ASAT, but these instructions look reasonable. The main thing I'm taking away is the optimal desired outcome is retaining 3/16" clearance between the bridge plate and body once the strings are tuned up to pitch. Let us know how you go!

Easiest thing to do is to have it sit flush. I've been fucking with my strat for a year trying to float the the stupid trem so it's looser and I can pull up on it etc etc but I can never strike a balance and it means readjusting saddle height and intonation a bunch of times and I've kinda given up. Seems like a good idea when Jeff Beck does it, but he pays some poor jerk to have that headache for him.

Which is what I should do, just pay. And I have been going through those G&L instructions but they are kind of complicated and I don't exactly know the end result. I mean I'm that clueless about Strat type tremolos. But I guess I can just set it to have 3/16" clearance like you say, that should be do-able. It's weird to me, though, I keep adjusting this thing and then that thing and it all goes out of whack over and over.

I own a Strat and avoided mucking with the tremolo, if it "works" don't fuck with it after a setup(or factory setup) is the best advice I can give... it takes an engineering degree vs Jaguar/Jazzmaster trem

As far as tremolo/string tightness, if the springs on the tremolo unit is in a "Y" formation you should have about the same tightness or trem action as a "loose" Jazzmaster(ex: being able to do a heavier tremolo wobble action without snapping your high-e string). On a Strat-style if you overdo the tightness you'll risk making it go hardtail/blocked territory and too loose you'll dive/snap strings too easily. That is the easiest dumbed down speak my friends' tech explained to me in Jazzmaster terms

This is exactly how I felt when I first bought a strat. I can handle offsets fine, but fuck the strat tremolo, it's so much less intuitive.

I agree, the strat tremolo takes a lot more time, finesse, everything. I've been practicing set-ups so as not to pay for them anymore, and the main patient (victim) has been my strat. Here's a video that I found somewhere, sometime, that really helped understand the tremolo system and how it should operate. My strat has a vintage 6 screw assemby. I believe your G&L will have just two pivot screws holding the bridge plate to the body. Get out your screwdriver, a tuner, a ruler, and a stack of posts-its and watch this. Follow the steps snd see what you think.
