So, as I don't know very well the different woods and how to reconize them, I deceided to create a database here for everyone who wants to know:

In which wood is my offset body ?
There will be some mistakes so sorry for them and please be free to share your knowledge to make this post more accurate.
So every contribution is more then welcome.

Alder:
Models:

Color/Appearance: Red Alder tends to be a light tan to reddish brown; color darkens and reddens with age. There is no visible distinction between heartwood and sapwood. The overall grain pattern and appearance is similar to Birch (Betula genus)—though redder than Birch—and both genera are derived from the same family, Betulaceae.
Grain/Texture: Grain is generally straight, with a moderately fine, uniform texture.
Endgrain: Diffuse-porous; small pores commonly in clusters or radial multiples of 2-4; growth rings distinct; smaller rays not visible without lens, larger aggregate rays less common but easily visible without lens; parenchyma banded (marginal), apotracheal parenchyma diffuse-in-aggregates.

Color/Appearance: Pale white to cream color, with only subtle growth rings. The color is mostly uniform throughout the surface of the wood.
Grain/Texture: Has a fine and even texture, which is preferred for wood carvers.
Endgrain: Diffuse-porous; small to very small pores in no specific arrangement; predominantly in radial multiples or clusters of 2-4; growth rings indistinct or distinct due to marginal parenchyma; rays visible without lens, noded; parenchyma banded (marginal), apotracheal parenchyma diffuse-in-aggregates.

Ash:

USA: Vintage Jazzmaster (years ?)
JAPAN: Special Edition Jaguar and Jazzmaster Thinline (Ash Top and Back over Semi-Hollow Alder), Jazzmaster limited edition JM66G, Mustang natural-finished MG-77.

Color/Appearance: The heartwood is a light brown color, though darker shades can also be seen, which is sometimes sold as Olive Ash. Sapwood can be very wide, and tends to be a beige or light brown; not always clearly or sharply demarcated from heartwood.
Grain/Texture: Has a medium to coarse texture similar to oak. The grain is almost always straight and regular, though sometimes moderately curly or figured boards can be found.
Endgrain: Ring-porous; large earlywood pores 2-4 rows wide, small latewood pores solitary and radial multiples; tyloses common; parenchyma banded (marginal), paratracheal parenchyma around latewood pores vasicentric, winged and confluent; narrow rays, spacing normal.


Mahogany:

USA: Vintage Mustang ?
CHINA: Modern Player Jaguar, Modern Player Jazzmaster
KOREA: The Fender Toronado GT HH (05/06)

Color/Appearance: Heartwood color can vary a fair amount with Honduran Mahogany, from a pale pinkish brown, to a darker reddish brown. Color tends to darken with age.
Grain/Texture: Has medium to large sized pores, and a medium texture. Grain can be straight, interlocked, irregular or wavy. Mahogany also exhibits an optical phenomenon known as chatoyancy. (See video below.)
Endgrain: Diffuse-porous; medium to large pores in no specific arrangement; solitary and radial multiples of 2-3; mineral deposits occasionally present; growth rings distinct due to marginal parenchyma; rays barely visible without lens; parenchyma banded (marginal), paratracheal parenchyma vasicentric.

Poplar:
USA: Vintage Mustang, Vintage duo sonic and vintage musicmaster
JAPAN: Classic Series '65 Mustang MG65
CHINA: Squier affinity duo sonic,

Color/Appearance: Heartwood is light cream to yellowish brown, with occasional streaks of gray or green. Sapwood is pale yellow to white, not always clearly demarcated from the heartwood. Can also be seen in mineral stained colors ranging from dark purple to red, green, or yellow, sometimes referred to as Rainbow Poplar. Colors tend to darken upon exposure to light.
Grain/Texture: Poplar typically has a straight, uniform grain, with a medium texture. Low natural luster.
Endgrain: Diffuse-porous; small pores in no specific arrangement; solitary and radial multiples of 2-3; tyloses occasionally present; growth rings distinct due to marginal parenchyma and noded rays; rays not visible without lens; parenchyma banded (marginal).

Limited Custom Deluxe Jazzmaster (Select Okoume with Flame Maple Top)
Japanese sen wood was used on 80s mij guitars, a silveriness to the grain that is different to ash.

Vintage Mustang, Vintage duo sonic and squier duo sonic, and vintage musicmaster were poplar.

Swinger was alder.

This should go to the library.

Japanese Jazzmaster/Jags were Basswood up to the mid 90's IIRC (95/96).

I don't recall any Fender offset made of Korina. The topic is about offset body wood, not tonewoods in general !

Japanese Jags (JG66) have always been Alder in sunburst. They were Basswood in the colors until 1992, when they switched to Alder.

Japanese Jazzmasters (JM66) were Sen for sunburst and Basswood for the colors until 1992, when they switched to Alder for both sunburst and colors.

Note: "Sen" is often called "Japanese Ash", and although its grain resembles Ash, it is actually a different species.
