I'm a noob to Jaguars and have decided to build one. I bought an AVRI 62 neck and bridge pickup. One has a black and yellow wire and one has a black and white wire. I assumed the black was ground and the colored wire is hot. Is that correct?

Correct.
Some Fender wiring diagrams are in colour and the pickup wire colours are correct for the pickup type. Not the 62 unfortunately but here is the 65 which also has black/yellow and black/white for its AV65 pickups. Assume that yours are the same.
