Sorry if this already exists but the search function is down.
Ive built a Jag and followed the Seymour Duncan jag wiring diagram. Ive shielded the cavities and back of the guard with copper tape and earthed the pickups to the back of the volume pot and the rhythm circuit pots to the bracket as described in the diagram but its buzzing like crazy whenever Im not touching the strings so guessing it must be a faulty ground. Any quick pointers or ideas? Where should it be grounded, have I over shielded it? Any ideas?

How is the shielded cavity grounded? Did you use one of those little lugs that screws into the wood and provides a solder point to join the ground at, say, the back of the volume pot?
Shielding only works when it's grounded. Take a multimeter and check for continuity between all grounds (pickguard shield, volume pot casing, cavity shielding, output jack, etc).
When you are not touching the strings, you are ungrounded and act like a giant antenna for noise. Having some noise that goes away when touching the strings is normal. It's usually reduced by shielding, but may not disappear entirely.
