So, for a build I'm thinking about, I thought it would be cool for it to have no switches and just a volume knob. (I'm a really big Sonic Youth fan! ;D ) I was just wondering if any of you guys took this approach on one of your guitars. How does the guitar sound in comparison to a normal Jazzmaster, or any other offsets?

I had my Jazzmaster wired up with just a single volume pot at one point. I used a 500k, and though I'm a dummy with electronics, so I didn't realize I was doing it, but that equals the same resistance load as the two 1Meg pots that were in there before. So the guitar really just sounded the same as it did before, there was just fewer knobs/switches/etc..

all mine are wired with just the 3 position toggle and a volume knob. it did make the guitars brighter than stock, and over time i have gone down to 250k for the pot (originally 1M). since this wiring requires a lot less wire, the guitars are probably a little less noisy. you often hear jazzmasters are noisier than most other guitars, but mine are quieter than both of my bandmate's telecasters.

Sorry about the noob question, but what's the difference between a 250k pot and a 1M pots? Does it have to do with brightness?

yes. simply put, the higher the value of the pot, the brighter the guitar will sound.
this has to do with the internal capacitance of the pot. when wired like a normal volume control, it also acts as a lowpass filter, cutting off some of the highs. the higher the resistance of the pot, the less effective this filter will be = less treble loss.
