This is tough because my favorite guitarists all happen to play offsets already and that is what got me interested in them in the first place. I'd say in no particular order...

When I think of players that have a distinct offset tone I think of Mary Timony, more so on certain albums. And Bluebottle Kiss. Both Jazzmasters but also very recognizable in sound which is a plus.
