I bought ANOTHER KC jaguar from Sweetwater and right out of the box it sounded and felt great!
But i'm was planning on putting mini-humbuckers in it anyway, so I swapped the pickguard, electronics, pickups, and strings.
But now it sounds more plunkier than ever!
why?
the only thing i can think of is i went from 9's to 11's for strings. Would going up in gauges make the plunky sound worse? i was hoping for a rock-in-roll machine in the form of a Jaguar.

It might be the strings and/or the 24" scale. I mean, Jaguars are kinda all about the plonk.
With that said, I play with 11s. When the ol' distortion pedal, fuzz pedal, or overdrive pedal is on, that always overpowers plonk. If you put some humbuckers in there I can't see this really being an issue.
I loathe the stereotypes and the stigma that some non-OSG people have about Jaguars, but I must admit that I never really think of Jags as 'rock-in-roll machines.' It does everything that I want it to, and gets plenty of sounds I love. I can fuzz out, surf out, twang out, and go off in just about any direction I feel like, but when I want metal and rawk sounds, I pick up my humbucker equipped Kramer.

the pickups i replaced with are Johnny Winter Firebird Pickups.

I have a 25.5" guitar with Jaguar pickups in it. Not nearly as much plonk that I can hear.

The only way to objectively find out what is happening is isolating the changes you made. Switch back the pickups and see what happens. If it doesn't help, then most likely it's the strings.
