Also, it looks as though there's some copper sandwiched underneath the pickguard. Is this common?

How do you tell if a 63 JM's pickups are real?

Touch them - if your finger doesn't pass through, it's good evidence that they are real.
Seriously - I'd be looking for undisturbed solder joints on the pickup and where it connects to the switch. You can tell if they're reflowed. They should also be pencil marked on the bobbin, but I will leave that for the real experts.
And yes copper shielding is an alteration, the pickguard shield should be aluminium and the cavity tubs brass with tinplate glazier points.
