Tortoise's TNT is hands-down my favorite album in this arena. Holds up incredibly well.
Rachel's is also pretty great. Selenography is my favorite.
For experimental electronic stuff I dig Four Tet and Amon Tobin.
Oh, and Earth for more drony metal instrumentals.

as someone who plays/writes a lot of instrumental/post-rock inspired music. i think people forget to actually write a fucking song and instead just have the whole song build to a crescendo. as much as i love post rock, there is a lot of boring in there. but if i might be honest, i always thought explosions in the sky were borderline boring. not boring enough to stand with the dregs of the genre but defo not as great as their diehard fans would exclaim.
