Maria Callas' version is considered by some to be the benchmark, but I love this one- been going back and watching/listening for years.

Here's another one I grew up loving. The whole piece is beautiful, but Movement 2 is enough to reduce me to tears if I'm in the right mood. If you don't know it, I highly recommend listening to it in its entirety.

I seem to always come back to Miles Davis's version of Brubeck's "In Your Own Sweet Way" from Workin' with the Miles Davis Quintet. I appreciate Brubeck's various piano arrangements, but the melody really shines when stripped down to single notes. And I'm not even a huge fan of the trumpet, but Miles seemed to know what he was doing. Same melody, same band, same recording, except done by Coltrane on sax? Nope.

Oh man, great question. There are so many for me. And they are sometimes the smallest little thing in a song, barely a motif, that catches my ears.
Maxence Cyrin - Where Is My Mind always hits me really hard.
I'd totally agree with Clair De Lune (in just about any form!), but my favorite might have to be the Clair De Lun Etereal version.
I love the Bjorn's tone for his Pink Floyd - Time jamming. 0:50-0:56 especially. That bend Always gets me.
Red - Hide - the piano outro starting around 4:19 is just gorgeous.
The Dear Hunter - Son - the whole song is amazing, but the vocal intro is just amazing.
Murray Gold - Never Tell Me The Rules (from the Doctor Who episode Time Of The Doctor). Starting around 1:08, when the rest of the orchestra gets into a kind of gallop, and the horns start to crescendo. Fuck. For me, this is what pride and courage feels like (good pride, not bad).
Dredg - Hungover On A Tuesday - around 0:23 when the guitar plays this kind of ambient single note thing. He plays a variation of it again at 2:36 that's a little more epic.
Dredg - Quotes - the whole song is very melodic in general, but the guitar in the chorus is just amazing.
Evan Gipson - Frigid Winds and Evan Gipson - Take Off - both are from a little indie game called Morphite (cool game too!). Mostly electronic soundtrack and really simple, but chill as hell.
Grizzly Bear - Sky Took Hold every melody in this song is ethereal and heavenly. Don't know who recommended Painted Ruins on here (Todd maybe?), but I'm eternally grateful. Might be one of my top 5 favorite albums ever.
John Williams - You Are The Pan - from the movie Hook. The flute melody that starts around 1:47. Sad just the way I like it.
Lettuce - Phyllis - all the melodies.
Lindsey Stirling - Take Flight - her violin work is beautiful, but this song in particular really stands out for me.
Michael Giacchino - Train Of Taut - from Incredibles 2. Just cool as fuck.
Nakagawa Kotaro - My Address - from the anime Planetes. Beautiful music. Amazing show too.
Ramin Djawadi - Dr. Ford - from Westworld season 1. Beautiful and haunting.
Eternity And Infinity Are In These Hands - from Gundam Wing.
Tomaso Albinoni - Adagio in G Minor

One of the few good childhood memories I have with my dad is of him sitting me down, putting this record on, and telling me the story of the water making its way through through different terrain and passing certain characters in its travels.
My memory is fuzzy on the details, but I found this explanation that fills in the details my dad left out:
Moldau starts with light, rippling figures that represent the emergence of the Moldau River as two mountain springs, one warm and one cold. Water from the springs then combines to become a mighty river, symbolized by a thickly orchestrated, stately theme that recurs periodically throughout the remainder of the work.
Farther downstream, the river passes jubilant hunters, portrayed by a horn melody, and then passes a village wedding, signaled by a passage in polka rhythm. The river then enters a gorge where, according to legend, water nymphs—suggested by serene and mysterious melodies—come out to bathe in the moonlight. With the morning light, the main river theme returns, though it soon breaks into tumultuous dissonance as the river enters the St. John’s Rapids.
Beyond the white water, the river reaches Prague, where to grand arpeggios of a regal hymn, it flows past the castle Vyšehrad, once the seat of power for Bohemian kings. After fading to a trickle, the piece—and the journey—comes to an unambiguous close with a loud two-chord cadence.

First thing that comes to mind is Townes van Zandt's "Our Mother the Mountain" but it's definitely the mysterious, melancholy type of beauty, and there is more than one kind.
