I got a new pedal in, so I might as well post a photo of the latest...aside from my new pedal (BJFE Bone Bender prototype), everything else has been the same for a year or so.

I actually lay everything out in Adobe Illustrator in real-life size to see if stuff will fit, how the cables will have to run etc before re-jigging stuff.
With my gigging days further and further away in the horizon, I play sitting down pretty much all the time, so pedals need to be easy to reach and evenly spaced.

Mine varies depending on what I'm playing, but I generally try to keep it down to no more than five pedals at a time.
